Winter Squash Salad

Anyone else exhausted from all the holiday festivities and hours of cooking in the kitchen? Yeahhh, same!

That’s why I’ve got you covered with this simple (my favorite type of recipe) that is still festive, but won’t have you spending too long in the kitchen. It’s a family favorite and goes great as a side salad to some of your favorite winter dishes.

Whatcha need:

  • 4-5 cups of mixed greens

  • 1/2 red onion, thinly sliced

  • 2 cups of cubed and cooked butternut squash (delicata and acorn squash are great substitutes)

  • 3/4 cup pistachios (walnuts are a great substitute)

  • 1 avocado, sliced

  • 1-2 persimmons, sliced (think like a tomato)

  • 2-3 handfuls of pomegranate seeds, sprinkle throughout

Dressing:

  • 1/2 cup extra virgin olive oil

  • 1 tbsp apple cider vinegar

  • 1/2-1 lemon, juiced

  • 2 garlic cloves, minced

  • salt and pepper to taste

Steps:

  1. Cube squash and toss into a steamer basket until soft. If you do not have a steamer basket, simply fill a pot with 2 inches of water and heat on stove. When water comes to a boil, throw in cubed squash and cover for 5 minutes or until squash is soft.

  2. Toss everything together in a mixing bowl.

  3. Stir dressing until ingredients are combined.

  4. Drizzle with dressing to taste!
